








Tahoe Oolong - Spring 2025
Crafted on our sun-kissed tea farm, Tahoe Oolong is a delicate yet complex tea that unfolds gracefully with each steeping. The cup opens with a soft orchid aroma that rises like spring air, followed by a layered flavor profile evocative of ripe Japanese plums, a touch of cinnamon, and a subtle note of sumac. The mouthfeel is round and refined, balancing toasted elegance with stone fruit richness, and finishing with a crisp, clean lift.
This is a moderately oxidized oolong that undergoes a special post-tumbling anaerobic wither to naturally boost its GABA (gamma-aminobutyric acid) which is a naturally occurring neurotransmitter that is well known for its calming effects such as reducing anxiety, improving sleep quality and enhancing mood.
Hand-Picked for Perfection
Hand-picked from the first flush; the tea is composed of 3-4 leaves and a bud on a single stem. Withered whole like this slows down the oxidation process to preserve flavonoids and creates a broad spectrum of oxidation where the youngest leaves are more oxidized than the older leaves. This broad spectrum has a broader range of flavors to create a complexity through the multiple steeps.
Meticulous Tumbling
The tumbling process was meticulously done to ensure the highest quality tumble that has leaves with oxidized edges and unoxidized centers all the while minimizing bruising. When examining the fully open wet leaf you can see the purple tinge on the edges of the leaf that shows our handiwork.
Harvesting and Processing Information:
The leaves are composed of mixed Camellia sinensis var. sinensis cultivars that are 100% estate-grown and were hand-picked.
One of the most complicated teas to make. The leaves subsequently underwent an 4-hour withering process at 70 degrees Fahrenheit before being tumbled off and on for 2 hours. After tumbling, the leaves were softly stacked to undergo an 8-hour anaerobic fermentation, which enhances the tea’s signature stone-fruit note and boosts GABA content.
The tea was then pan-fired to halt oxidation, lightly rolled, and slowly oven-dried at 50°C for 4 hours to preserve aroma and lock in its elegant structure.
