











Ojai Green Tea - Spring 2025
A Calming and Rejuvenating Brew.
Our whole leaf green tea is a delicate expression of spring—bright and floral, with a silky, buttery texture that glides across the palate. Crafted to be remarkably smooth and low in bitterness, this tea is welcoming even to those who think they don’t like green tea. We believe one cup is enough to change their mind.
Made with care from our California-grown Camellia sinensis, this tea undergoes a traditional pan-firing process that preserves its fresh character and enhances its natural sweetness. As the leaves unfurl, they release a bouquet of citrus blossom and fresh greens, filling the cup with uplifting aroma and gentle complexity.
After firing, the tea was carefully scented with hand-picked citrus blossoms from our estate using the traditional enfleurage method. This imparts a lush floral-citrus note and a soft tangy lift—without the bitterness the petals would bring if left in the final tea.
Silky Texture and Evolving Flavor:
Each serving yields 3 to 4 graceful infusions, with the tea deepening in complexity as the leaves fully open. Thanks to its remarkably low astringency, even longer steep times in the later infusions reveal layered notes without any bitterness—just smooth, balanced flavor from start to finish.
Harvesting and Processing Information:
Our tea is made from a blend of first-flush Camellia sinensis var. sinensis cultivars, grown and hand-picked on our estate to traditional green tea standards of one to two leaves and a bud.
After harvest, the leaves undergo a gentle 4-hour wither at 70°F before being pan-fired to halt oxidation and lock in their verdant character. They’re then lightly rolled to shape and slow-roasted at 50°C for four hours, preserving their delicate floral aroma and smooth mouthfeel.
